Dovecote Viognier is made to be an expressive yet graceful and polished rendition of this aromatic varietal. Bright pale straw, the 2017 Dovecote Estate Viognier begins with a subtle perfume of white peach and tea rose. In the glass a sensual palate of star fruit, pomelo, and tart green apple is framed by a zesty acid-driven structure. It transitions through a full and silky finish with lingering crushed rock minerality and jasmine essence.
Classic matches such as oysters, scallops, and poultry are wonderful, yet the 2017 Estate Viognier can stand up to and complement the more challenging dishes such as grilled artichokes, Indian and Chinese cuisine, and spiced Latin American fare.
VINEYARD NOTES
Quail Valley Vineyard is a single-acre vineyard planted on rocky alluvial soil in 1998 within a relatively cool area of the Los Olivos District AVA in Santa Barbara County. It lies sheltered within a narrow valley that permits enough warmth to ripen the fruit slowly and retain acidity, while also limiting harsh exposure that can mute aromatics. We farm and harvest the vineyard entirely by hand with no machinery or power equipment.
WINEMAKING NOTES
Grapes were hand harvested at night on September 6, 2017. The fruit was then pressed whole cluster, racked directly to barrel, and fermented in stainless steel with no secondary fermentation. It was bottled February 15, 2018 and is ready to enjoy now and over the coming 2-4 years.
