Dovecote Viognier is made to be an expressive yet graceful and polished rendition of this full-bodied aromatic varietal.  Bright pale straw, this Viognier begins a perfumed nose full of licorice, white peach, and jasmine.  In the glass a full bodied palate of sweet anise, guava, and star fruit is framed by a zesty acid-driven structure with ample acidity.

Classic matches such as oysters, scallops, and poultry are wonderful, yet our Estate Viognier can stand up to and complement the more challenging dishes such as grilled artichokes, Indian and Chinese cuisine, and spiced Latin American fare.

VINEYARD NOTES

Quail Valley Vineyard is a single-acre vineyard planted on rocky alluvial soil in 1998 within a relatively cool area of the Los Olivos District AVA in Santa Barbara County.  It lies sheltered within a narrow valley that permits enough warmth to ripen the fruit slowly and retain acidity, while also limiting harsh exposure that can mute aromatics.  We farm and harvest the vineyard entirely by hand with no machinery or power equipment.

WINEMAKING NOTES

Grapes are hand harvested at night usually in late September.  The fruit is then immediately pressed whole cluster, allowed to cold-settle overnight, and then fermented and rested in stainless steel without going through malolactic fermentation.  It is bottled in spring of the following year and is ready to enjoy immediately and over the coming 2-4 years.
